The Story of Mint Confetti

For the real scoop on Three Twins' flavors, we went straight to the source: Founding Twin Neal Gottlieb. Here’s what he says about our fresh, flavorful Mint Confetti.

Mint Confetti is mint ice cream with flecks of dark chocolate. This is not mint chip. It's better.

Mint Confetti starts with our house-made ice cream base and its four simple organic ingredients: milk, cream, sugar and eggs. We then add not only organic mint extract (peppermint, if you must know), but also Madagascar vanilla. Adding vanilla to mint ice cream isn't all that common in the misguided ice cream industry. It costs a bit more, too. But, it adds a roundness and richness of flavor that serve to make Mint Confetti even more delicious.

You might notice that Mint Confetti is not green. There is a good reason for this. While it is true that mint leaves are green, it is an extract of these leaves that goes into ice cream. This extract is crystal clear – not green. Why others insist on using an artificial chemical to color their mint ice cream green is beyond me. Personally, I choose to add only ingredients that contribute to the deliciousness of my ice cream.

One of the traits shared by many of my ice creams is that they are slight twists on classics. Mint Confetti is a prime example of this. I am no fan of big, hard, waxy chocolate chips in my ice cream. They put your dental work at risk, and they don't do the best job of sharing their chocolate flavor with your tastebuds.

Mint Confetti solves these vexing problems with delightful flecks of dark chocolate that dance on your tongue. Be not confused: flecks are entirely different from chocolate shavings. When one adds pre-formed chocolate shavings to ice cream, one also mixes in a little air, which often makes a little air pocket adjacent to the chocolate shaving. This innocent air pocket becomes a tiny ice cave as the ice cream hardens, and it leads to jagged little bits of ice that ruin the fun when you and your tongue dig in.

In lieu of shavings, we melt organic European dark chocolate that we mix with a tiny bit of organic soy oil. That smoothes out the chocolate and allows for perfectly-sized flecks. Then, we inject it into the finished ice cream stream and mix to form our flecks of dark chocolate. The result is nothing but delightful.
